Indian, French, Italian, Chinese... there is a considerable variety of culinary specialties on Grand Bahama and New Providence. Consisting of pork cooked with onions, celery, tomatoes, rice and peas, peas'n rice is the national dish. Seafood is also an important component of the gastronomy all over the archipelago. Conch cotriade (a consommé containing conch, tomato, pork, vegetables and herbs), conch salad, grilled conch... Conch is definitely the most frequently prepared seafood. Then there are numerous deliciously cooked fish, particularly what is called crayfish or lobster.
