Bolivian cuisine is very varied and each region has its specialities. Dishes are usually based on meat and potatoes. Try the famous saltena, a meat pasty with potatoes and eggs, seasoned with a chilli sauce. Ideal at altitude, the soup based on peanuts, maize and potatoes, feels good. The 'must' is without doubt trout from Lake Titicaca, however, you will only find it in the region and in the big hotels of La Paz. The Bolivians drink a tea made from coca leaves (the country is the second world producer) to alleviate altitude sickness. Strong stomachs can try api, a thick drink based on maize drunk at breakfast. Chicha, the local alcohol, is easily drunk. The wine is good quality, and the country has numerous varieties of beer.
