There are various specialities in Uyghur cuisine: the kebab sandwiches are served with a pancake, the noodles with spicy vegetables, and the meat is beef and lamb. The night markets have a number of stalls serving good food. Fresh and dried fruit (grapes at the beginning of September) are in abundance. However, the typically Chinese cuisine is everywhere. The menus are rarely written in English. In the province of Gansu, you have to try roast suckling pig, carp in a sweet and sour sauce, fried mutton tail, and, in particular, hand-made noodles.
