Cooking Cuba

Cuban cooking is above all 'rustic'. Though Cuban lobster is renowned around the world, Cubans don't eat much of it and they aren't a nation of fish lovers either. The national dish is congri, a mixture of fried onions, rice, black beans and bacon bits. Pork is the main meat, fried or roasted. Chicken is cooked the Creole way, prepared with a sauce that is tasty yet not spicy. Rice, sweet potatoes or plantain bananas are traditionally served with every dish. Picadillo, another traditional dish, is made from minced beef with garlic, onions, tomatoes and lime. The best place to eat typical Cuban food remains La Bodeguita del Medio, on Calle Empedrado, in old Havana. It's a Spanish style bodega, whose graffiti covered walls started a trend; this decoration is now found in many restaurants of this kind. The national drink is the mojito, a heady cocktail of white rum, lemonade and mint leaves.
