The national dish is Ful medames (simmered fava beans with onions, cumin and lemon), and is served at every meal. Molokhia, is a popular dish (a thick soup made from the herb of this name) finely chopped, with peppers and garlic, and served with rice and pieces of chicken. Another nourishing dish: Kushari (mix of rice, lentils and noodles), with fried onions and spices.
For a starter, the tradition is to serve mezzes (a falafel assortment), fried chickpea balls, Tahini (a sesame paste), houmous (mashed chickpeas) and vegetables...
In Alexandria you should taste the giant gambas and the grilled fish.
As for desserts, oriental pastries are made from honey and oil. Accompanied by a carcadé (infusion made from hibiscus flowers), served hot or cold, or a strong thick Turkish coffee.
