Produced from the must of cooked grapes, obtained from grape varieties originating from the region of Modena, the secret of the Traditional Balsamic Vinegar of Modena lies in its slow ageing process (in barrels) which can last for up to 50 years. The particular temperatures guaranteed by the climate in this part of the country are a key factor in making this vinegar what it is and enhance its characteristic sweet taste. There are numerous places in Modena and the surrounding areas where this vinegar is made, providing an opportunity to familiarise yourself with the regional cuisine. Drops of this exquisite vinegar can be enjoyed in risottos, on shavings of parmesan cheese, or even with fruit. However, Modena is also famous for its good wines.
