The sugar cane harvest starts as early as February in the West Indies. The stems are cut, washed and mashed to extract the juice. This is the juice used in the agricultural production of rum for which Martinique received its AOC (original guaranteed quality) in 1996. There is also industrially made rum, made by distilling the molasses. This one is produced everywhere in the world and is of a lower quality. In order to better understand the different stages in the production of rum, many distilleries are open to the public and propose tastings.
