For 2 people:
- 200g of boiled rice (cooked the night before or chilled at least 2 hours beforehand)
- 2 eggs
- 2 tablespoons of vegetable oil
- 1 tablespoon of soy sauce
- 1 tablespoon of vin jaune
- 1 shallot
- Salt & pepper

Finely chop the onion and put to one side.
Beat the eggs together with the vin jaune. Then heat the wok with a tablespoon of oil and when hot enough pour in the egg mixture and leave to cook until a partly cooked omelette is obtained.
Place the omelette on a board and cut into small pieces and put to one side.
Add the rest of the oil to the wok and fry the onions until golden on a low flame. Add the rice and the eggs, mix well and leave to cook on a low flame.
Pour on the soy sauce and add salt and pepper just before serving.
Friend rice was originally a dish made with the leftovers of rice cooked with eggs and, according to the region, chicken, prawns, ham, carrots or peas.
