Ingredients for 4 people:
- A large perch of 500-600g, skinned and filleted
- Half a red pepper
- 1 bunch of coriander
- Half a lime
- 4 cloves of garlic
- 2 teaspoons of cumin
- 1 tablespoon of paprika
- Half a teaspoon of cayenne pepper
- 2 tablespoons of olive oil
- Salt, pepper
Remove the skin from the garlic cloves. Remove the seeds from the half pepper and rinse the coriander.
With a mixer, mix the three together.
Add the spices, the juice of the lime and the olive oil. Add salt and pepper and mix again. Keep to one side in a bowl.
Pre-heat the grill or barbeque.
Make a few incisions in the fish and coat generously with the mixture. Grill for several minutes on each side. Take the rest of the sauce and place on the plates before placing the grilled fish on top.
