Ingredients for 1 person:
- 6 cl white rum (preferably Cuban!)
- 7 leaves of fresh mint
- ½ lime
- 6 oz of soda water
- 2 teaspoons of cane sugar
- 4 ice cubes

To prepare:
To make this famous Cuban cocktail look the part, use a glass tumbler (a tall glass) for your drink.
Cut half a lime into 6 wedges and place them in the glass.
Add 2 teaspoons of cane sugar.
To get the most juice, mash the limes into a pulp with a pestle. Make sure the lime juice is mixed with the sugar.
Add mint leaves and crush them gently this time with the pestle.
Add the rum and stir well.
Use a tea towel to wrap the ice up, and then crush with a rolling pin. Fill the glass with the crushed ice. Top up with sparkling water.
Add a sprig of mint for garnish and a straw for flair.
