Tea is much more than a drink in Taiwan: It is an art in its own right, with specific rituals. Taken with each meal, this beverage is excellent for health and easy digestion. Tea ceremonies obey strict rules and this has been the case for centuries! Taiwanese drink mostly green tea, with neither sugar nor milk, during meals and in the evening, but not in the morning or afternoon, unlike in Western societies. The Oolong tea, partly fermented midway between green and black tea, is one of the most renowned. Taiwanese tea is known worldwide and is even considered by the British as the champagne of "teas"! Taipei city dwellers always take time out at one of the countless traditional tea houses in the city.
