Tunisia's cuisine is rich and spicy, and it is important to know this when sitting for a meal on a stiflingly hot day. The salads, including the mechouia (made up of tomatoes, onions, sweet pepperskled with olive oil and lemon), are just perfect for lunch. At dinner, you should try the traditional tajine (mutton stew prepared in various ways) or couscous, for which the people of Djerba are genuine specialists. You will also find sweet couscous with dates, raisins and almonds served for dessert. The fritter is eaten at any time of the day. It is a rolled up pancake wrapped with anchovy, dried lamb meat or chicken inside.
The country boasts succulent pastries: loukoums, honey bricks, àçida (an oil and semolina cake) with cream or honey and pistachio balls. In Tunisia, you do not go for a day without drinking mint tea. It is the national drink, served hot and very sweet.
