World renowned, and rightly so, Turkish cuisine is made up of hot and cold appetisers known as 'meze'; cucumber yoghurt dip, marinated mackerel, stuffed eggplants, berek (puff pastry stuffed with cheese or meat) being just a few. Apart from the roast meat offered in the form of kebabs, you will find several delicious fish dishes. Bulgur (crushed wheat), rice, and the traditional tomato-cucumber salad are the most common accompaniments. The countless pastries and sweet delicacies are simply excellent; start by tasting the baklava (a honey and pistachio pastry), loukoums (a soft jelly candy with powdered sugar on top), or rosehip preserve. Regional drinks are the raki, an anise-flavoured spirit, Turkish coffee (very strong), and local wine.
When invited to a Turkish meal, be aware that your plate will be refilled by your host each time it is empty... Once you are full, leave your plate full to show that you have eaten as much as you can.
