The hotel has three restaurants, which are located in three separate dining rooms, each with a different name. 'Sala Moresca' is used for banquets and is also open to people not staying at the hotel, available for them to book for major celebrations. 'Sala Aragonese', which is on the lower ground floor, is where breakfast is served. Finally, lunch and dinner are served to hotel guests in 'La Corte', next to reception, which has been romantically covered with a wood and crystal ceiling.
At breakfast, you can enjoy homemade dishes like plum cakes, muffins and other kinds of cakes baked by the hotel chefs. Lunch and dinner are served a as buffet, with a choice of three different starters and main courses, which always include one typical local dish and one 'light' option. There is a different 'baby' menu for children every day. There are also various hors-d'œuvres, vegetables and desserts to choose from. The hotel organises two special evenings. The first has a local theme, serving regional dishes and a buffet of Mozzarella cheese and other dairy products; the second is the gala night, when you can enjoy table service and beautifully presented dishes like scialatielli pasta with lobster, or crayfish, lemon and prawn risotto. Later, the cake is cut next to the swimming pool and accompanied with verrines and Prosecco.
It is no accident that the wine list only contains vintages from the Puglia region, the intention being to promote the wine produced in this very fertile part of Italy. Indeed, the cuisine served at the Gabbiano also pays homage to the local area in its use of another of Puglia's main products, olive oil, which can be enjoyed at the buffet in various different forms and flavours.
