Apulia is region big on agriculture. The main local produce includes olives and olive oil, almonds, figs and grapes, as well as vegetables like tomatoes, sweet peppers and aubergines. Of course, there is also pasta. The most typical variety are the 'orecchiette' in the shape of ears. Various tomato-based sauces usually accompany the meat and pasta dishes here. Fish and sea urchins come fresh from the sea and this area is also known for its excellent red and dry white wines.
