With low temperatures all year round and plenty of fresh locally-grown products, the regional cuisine here is rich in flavour. Cheese is espeically important here. In terms of cooked meats, try and taste the famous 'speck', which has a lightly smoked flavour. 'Canederli', a traditional Tyrolean dish, is made with homemade pasta a,d accompanied by a thick sauce. In Merano, the typical soups you will find in the restaurants are often snail soup and soup with knÚdel (balls of cooked potatoes). The main types of meat used in cooking are deer and venison, often served with polenta. The classic regional pastries, with their Austrian influences, include delicious strudels and several other apple-based sweet treats. A typical cake from Bolzano, 'canederli' is made with apricots, and 'pan dolce'.
