Museums can be found in the bigger towns and cities. If you only visit one then it should be the National Gallery in Edinburgh. If you have a bit more time, don't hesitate to visit the temporary exhibitions. Events-wise, Burns really deserves a category to itself, as such a significant cornerstone of Scottish culture. That said, don't undervalue the country's more contemporary offerings.
