You can't come to Greece without eating a Greek. Also known as kebap in Turkey, these grilled meat sandwiches come in many variations. Here, you'll hear them referred to as gyros. As well as being inexpensive, this type of street food allows you to eat quickly between two visits. It's also an opportunity to try some local produce. Like the famous Greek yoghurt, which is often the main ingredient in gyros sauces, and Santorini tomatoes.
This may not be obvious given the country's drought, but tomatoes are one of the island's pride and joys, and are used in a local PDO recipe: tomatokeftedes, tomato fritters that are sold all over the island in season. In the sauces we also frequently find fava, a purée of yellow split peas, which also has a PDO.
