Taste Corsican specialities at Ajaccio's covered market

If you love food, traditions and agriculture, you'll love Ajaccio's market. Also known as the mercatu d'aiacciu, this is a real meeting point for the town. It brings together locals and tourists alike, both in winter and summer. In large halls near the town's port, local producers display the delights of Corsican cuisine, such as charcuterie, cheese and seasonal fruit and vegetables. At weekends, the market expands to include clothing and jewellery, as well as food products. If you're passing through Ajaccio, the market is a great place to pack a picnic for a day out, or to pick up some souvenirs on your return.

Olive oil, soaps, spices, herbs, seasonal fruit and vegetables, cheeses of all kinds, etc. You'll find absolutely everything you need at the Ajaccio market. Corsica is famous for its tasty cuisine. Here you can sample superb figatellis, brocciu and canistrelli. The Corsican merchants are very friendly, so don't hesitate to ask them any questions you may have, and they'll be sure to give you a taste.

On Wednesdays and Saturdays, local producers come to expand the market and offer you the fruits of their labours. In accordance with the charter of the Chamber of Agriculture, the producers share values such as quality, respect for the seasons and traditions, transparency, etc. At weekends, when the market attracts the biggest crowds, a fairground market is held alongside the covered market. So, as well as food products, you can find clothes, souvenirs, jewellery and more.

Three specialities you must try

Prisuttu ham

A delicious dry-cured ham from the thighs of the " Porcu nustrale " pigs that roam the scrubland, prisuttu is typical of Corsica. The nutty flavour of this charcuterie is probably due to the fact that the pig is fed exclusively on acorns and chestnuts and has spent its life roaming freely in the hinterland of the island of beauty for decades.

Figatellu sausage

The same pig produces this sausage made from meat, liver and fat. It's a perfect balance between the flavour of the meat, the spices added and any smoking. To be eaten sliced if dry, or lightly pan-fried.

Brocciu

Even though Corsicans incorporate it into many recipes and call it the "king of Corsican cheeses", brucciu is not strictly speaking a cheese. In fact, it's a fresh, creamy white cheese. It is made from whey, which is mixed with pure sheep's or goat's milk. More scientifically, whey is also known as "milk whey". It is obtained during the cheese-making process. It can be eaten fresh as a dessert, out of season (i.e. from autumn to spring), but can also be preserved with salt to stuff all kinds of dishes: omelettes, ravioli, fritters, tarts, artichokes or fish.
